Ham Steak

Ham Steaks with Jalapeño & Cherry Cola Glaze

Ingredients
  1. 1 cup cherry cola
  2. 1 cup firmly packed brown sugar
  3. 4 red jalapeños, seeded and chopped
  4. 1 green jalapeño, chopped with seeds
  5. 4 tablespoons cornstarch
  6. 4 tablespoons grenadine
  7. 4 (4-ounce) ham steaks
  8. 2 tablespoons olive oil
  9. Freshly ground black pepper
Instructions
  1. Set the EGG for direct cooking (no convEGGtor) with the Cast Iron Grid. Preheat the EGG to 400ºF/204ºC.
  2. Combine the cherry cola, brown sugar, and jalapeños in a small saucepan on the stovetop and simmer for 10 minutes. Using a fork, mix the cornstarch with the grenadine and add to the saucepan. Whisk together and cook for 1 minute, or until thickened. Carefully pour the hot glaze into the bowl of a food processor fitted with the steel blade and process for 30 seconds. Pour the glaze into a small bowl and set aside.
  3. Brush the ham steaks with the oil and season with pepper. Place the ham steaks on the Grid. Close the lid of the EGG and cook for 5 minutes, turn the steaks over, baste with the glaze, and continue cooking for 5 more minutes.
  4. Transfer the steaks to a platter and baste them with the glaze. Pour the rest of the glaze into a dish. Serve the ham steaks immediately with the glaze on the side.
Notes
  1. When combined with jalapeño peppers, the cherry cola in this sauce makes an incredible glaze!

Stuffed Jalapeño Peppers

Ingredients
  1. 2½ cups grated Parmesan cheese
  2. 10 Jalapeño peppers (split and seeded)
  3. 1 pound ground turkey
  4. 8 ounces cream cheese
  5. 4 ounces shredded cheddar
Instructions
  1. Using the Jalapeño Corer from the Jalapeño Pepper Rack, cut off stem end of the jalapeños and remove the seeds. Be careful not to touch eyes or face, as pepper juice can sting.
  2. Place Parmesan cheese, turkey and cream cheese in a food processor. Blend until all ingredients are combined; spoon the mixture into each of the split jalapeños.
  3. Set the EGG for indirect cooking at 375°F/190°C.
  4. Grill the jalapeños until the peppers are tender and lightly browned, about 20 to 30 minutes for twenty average size peppers. Add the shredded cheese 2 minutes before you finish cooking the peppers so that it will have time to melt.

Ingredients
  1. 1 lb bacon (cooked & crumbled)
  2. 10-12 jalapenos (cleaned, cored & diced) (I usually leave a few seeds for heat)
  3. 2 - 8oz pkgs cream cheese softened
  4. Favorite rub (optional)
  5. 12 oz jar sweet/spicy salsa (we like Paul Newman’s Pineapple Medium heat)
Instructions
  1. Get BGE indirect or raised direct set up to 325. I like to use a Cast Iron skillet so I can cook and serve in the same pan.
  2. In a cast iron skillet, cook the bacon until crispy. Drain, crumble & set aside. While bacon is cooking, clean, core & chop jalapenos.
  3. After bacon is cooked use some of the bacon grease to sauté the chopped jalapenos. Usually this takes about 10 minutes on medium heat.
  4. When cooked jalapenos have cooled down spread the softened cream cheese over the top of the jalapenos. Try to spread the cream cheese so the jalapenos stay on the bottom of the pan. Remember this is a dip. Sprinkle your favorite rub on the cream cheese.
  5. Spread the salsa over the cream cheese so it is covered.
  6. Take the crumbled bacon and cover the salsa completely.
  7. Bake the dip in the Big Green Egg at 325 for 25-30 minutes until bubbly. Serve with pita chips or favorite crackers.
Notes
  1. TIP: Be sure and use gloves when working with jalapenos.
