Ingredients
  1. 1 garlic clove, halved
  2. 1 ½ cups dry white wine
  3. 4 cups coarsely grated Gruyere or Emmental cheese
  4. 3 teaspoons cornstarch
  5. 2 tablespoons kirsch or vodka
  6. A pinch of ground nutmeg
  7. Fresh ground pepper to taste
  8. 3 medium baguettes
Instructions
  1. Rub the inside of the Le Creuset Fondue Pot with the cut side of the garlic. This imparts a slight flavor to the pot that will not overpower the flavors of the cheese.
  2. Discard the garlic. Pour the wine into the fondue pan and bring to a boil over medium heat on the stovetop.
  3. Reduce the heat to low and gradually add the grated cheese; a small handful at a time is a good measure. Stir thoroughly to melt each handful before adding more. Be careful not to add too much cheese at once, or it will become stringy or stick together in a clump.
  4. Blend the cornstarch with the kirsch or vodka and stir into the fondue. Continue cooking and stirring until the mixture is thick and creamy.
  5. Stir in the nutmeg. Add pepper to taste.
  6. Transfer the fondue pot to the stand with the sprit burner lit. Adjust the flame to a lower heat by moving the lever on the burner to close off some of the holes.
  7. A low heat will be sufficient to keep the cheese smooth and warm without sticking.

Ingredients
  1. ¼ lb ground sausage
  2. ½ cup black olives (diced)
  3. ¼ cup pepperoni (diced)
  4. 1 cloves garlic (minced)
  5. ½ tsp oregano
  6. ¼ cup white onion (diced)
  7. ⅛ cup green peppers
  8. ½ cup shredded cheddar cheese
  9. ½ cup shredded mozzarella cheese
  10. ½ cup shredded Monterey Jack cheese
  11. ½ tsp salt
  12. 1 can pizza sauce of your choice (approximately 30 oz)
Instructions
  1. In a skillet over medium heat, fry the sausage until it is brown, breaking it apart as it cooks. Add onions and peppers, and saute until they are soft (~5 minutes).
  2. Transfer meat, onions, and peppers to a Blendtec blender, and add all other ingredients. Select ‘Dips’ setting, or blend on medium-low for 30 seconds.
  3. Transfer dip to a microwave-safe container, and heat for 30-60 seconds, or until cheese is melted.
  4. Serve warm with crackers, chips, or sourdough bread. Refrigerate for later use.

Ingredients
  1. 1 boneless chicken breast (about 10 ounces), cooked and shredded
  2. 5.3 ounces (one small container) non-fat plain greek yogurt
  3. 4 ounces Neufchatel cheese (reduced fat cream cheese)
  4. ½ cup grated cheddar
  5. 1/3 cup buffalo sauce (such as Frank’s Red Hot)
Instructions
  1. Mix chicken breast, Greek yogurt, Neufchatel cheese, cheddar, and buffalo sauce in a saucepan. Heat until cheese is melted and mixture is hot. Serve immediately.
  2. Serve with celery sticks.
