Grilled RealSweet® Vidalia® Onion and Peach Salad

You may have heard the phrase "if it grows together, it goes together". This means that foods that are grown in the same season and region often create a great flavor combination. This recipe applies that rule of thumb by incorporating peaches and Vidalia onions, two homegrown favorites that are both coming into their peak season, as well as spinach, which is still available at many area farmers markets. Who says "BBQ" has to include meat? Bring out the natural sweetness in these ingredients when you prepare them over an open flame!

Ingredients
  1. 1 RealSweet® Vidalia® onion, sliced into 1/2 inch rings
  2. 1 pkg. (6 oz.) Baby spinach
  3. 1 Peach, sliced in half
  4. ¼ C. Goat cheese, crumbled
  5. Vinaigrette salad dressing, amount as desired
Instructions
  1. Brush sliced RealSweet® Vidalia® onions with olive oil and season with salt and pepper.
  2. Grill onion slices and peaches over medium-high heat until tender, about 4 minutes per side. Thinly slice peaches.
  3. Toss together baby spinach, peaches and RealSweet® Vidalia® onions.
  4. Top with goat cheese and drizzle with your favorite vinaigrette salad dressing.

Ingredients
  1. 4 medium sweet potatoes
  2. Water to cover
  3. 3 tablespoons extra virgin olive oil
  4. ½ teaspoon sea salt or Spike seasoning
Instructions
  1. Preheat grill to 400◦
  2. Wash and cut sweet potatoes lengthwise into long wedges, leaving skins on
  3. In large pot, add cold water to cover sweet potatoes and bring to a boil
  4. Simmer for 3-4 minutes or until potatoes start to soften. Drain
  5. Transfer wedges to large mixing bowl and drizzle with olive oil and season with sea salt and gently toss
  6. Arrange sweet potato wedges on grill or grill pan and cook about 10 minutes or until desired doneness

  1. Spike Seasoning is a natural, all-purpose seasoning with 39 different spices. Find it on the spice aisle in your favorite grocery store.

Ingredients
  1. 1/2 cup (80 g) red or green grapes
  2. 1 medium orange, peeled, halved, seeded
  3. 1/2-inch-(1.3cm) thick slice pineapple, core included
  4. 1/4 (4 oz) cucumber, peeled
  5. 1 (2 oz) carrot, halved
  6. 1/4 (2 oz) medium apple, cored, seeded
  7. 2 cups (480 ml) ice cubes
Instructions
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute, using the tamper to press the ingredients into the blades.
