Corned Beef and Cabbage Soup

Ingredients
- 2 tbls butter
- 1 medium diced onion
- 3 cloves of minced garlic
- 2 chopped carrots
- 2 bay leaves
- 1 sprigs of thyme
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 2 Irish potatoes quartered
- 6 cups cabbages chopped
- 8 cups beef broth
- 1 lb cooked corned beef 1/8 inch slices
Instructions
- In a large pot, melt butter and add in onion, garlic, carrots, bay leaves, thyme, salt and pepper. Saute, stirring frequently, until tender.
- Stir in broth cabbage and potatoes. Cover and bring to a boil. Reduce heat to medium-low and continue to simmer covered for 20 minutes. Uncover and add corned beef and simmer for around 15 more minutes, let rest for 15 minutes and serve.
