Ingredients
  1. 1/4 cup (60 ml) water
  2. 6 ounces (180 ml) tequila
  3. 2 ounces (60 ml) Grand Marnier or Triple Sec
  4. 1 orange, peeled, halved
  5. 1 lime, peeled, halved
  6. 1 lemon, peeled, halved
  7. 6 Tablespoons (75 g) granulated sugar
  8. 6 cups (1.4 l) ice cubes
Instructions
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds, using the tamper to press the ingredients into the blades.
  5. Pour into salt-rimmed margarita glasses.

This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix blenders or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

Crème Brûlée with Coffee

Crème Brûlée with Coffee

Ingredients
  1. 100 ml coffee
  2. 150 g single cream
  3. 150 ml milk
  4. 50 g sugar
  5. 2 eggs
  6. 2 egg yolks
  7. 1 tbs butter
  8. 4 tbs brown sugar
  9. 2 tbs espresso powder
Instructions
  1. Combine the cream, milk, coffee and sugar in a saucepan, and bring to the boil. Remove immediately from the heat and leave to cool slightly.
  2. Beat the eggs and egg yolks and blend with the cream/coffee mixture.
  3. Pre-heat the oven to 180°C (Gas 2-3, convection oven 160°C). Pour the mixture into four buttered 125 ml fireproof dishes. Stand dishes in a bain-marie / water bath, and bake for 30 – 35 minutes.
  4. Remove from oven, leave to cool, then refrigerate for 2 hours.
  5. Scatter 1 tablespoon of brown sugar over each dish, and caramelize, either for 1-2 minutes under the grill, or with a special blowtorch.
  6. Sprinkle the espresso powder over the hot sugar, and serve immediately in the dish.

  1. 45 ml espresso
  2. 150 ml milk
  3. 40 ml amaretto flavored syrup
  4. Chocolate sauce
Instructions
  1. Cover the base of a decorative glass with chocolate sauce.
  2. Prepare the milk foam in a separate cup or glass, mix with amaretto syrup and pour this mixture carefully into the glass.
  3. Prepare the espresso in a separate cup or glass and pour it carefully into the glass through the milk foam.

  1. Serving suggestion
  2. Crumble an amaretti biscuit on top of the drink to decorate.
