Cupcakes
  1. 1 11oz bottle Guinness Extra Stout
  2. 1/2 cup whole milk
  3. 1/2 cup vegetable oil
  4. 1 tbls of real vanilla extract
  5. 3 large eggs
  6. 3/4 cup greek yogurt
  7. 2 1/2 cups all-purpose flour
  8. 1 1/2 cups granulated sugar
  9. 1/2 cup of 90/10 dark chocolate
  10. 1 1/2 tsp baking soda
  11. 1/2 tsp salt
  12. cupcake liners
  13. butter to grease cupcake pan
Frosting
  1. 8 oz cream cheese, at room temperature
  2. 1/3 cup heavy cream
  3. 3/4 lb powdered sugar
  4. Shaved 90/10 dark chocolate
Cupcakes
  1. Heat the oven to 350°F and arrange a rack in the middle.
  2. Mix together the Guinness, milk, vegetable oil, and vanilla in a large bowl, then mix in the eggs, one at a time, until completely incorporated. Whisk in the sour cream.
  3. Mix flour, sugar, dark chocolate, baking soda, and salt in another bowl. Combine this mixture into the wet Guinness mixture.
  4. Bake around 20 to 25 minutes. Let the cupcakes cool completely before removing from the pan and adding the icing.
Frosting
  1. Mix the cream cheese and salt in the bowl until it is almost whipped. Gradually mix in the heavy cream until smooth. Slowly mix in the powdered sugar until smooth.
  2. Frost the cupcakes then top with a small sliver of dark chocolate.

Irish Dill Soda Bread

Ingredients
  1. 4 cups all-purpose flour
  2. 4 tablespoons white sugar
  3. 1 teaspoon baking soda
  4. 1 tablespoon baking powder
  5. 1/2 teaspoon salt
  6. 1 cup of butter
  7. 1 1/4 cup of whole buttermilk
  8. 1 large egg
  9. 1/8 cup of fresh dill
Instructions
  1. Preheat oven to 375 degrees. Lightly grease a loaf pan.
  2. Mix together flour, sugar, baking soda, baking powder, dill, salt and 1/2 cup of butter. Stir in 1 cup of whole buttermilk and the egg. Put dough on lightly floured surface and knead slightly. Place dough into a loaf pan.
  3. In a small bowl, combine 1/2 cup of melted butter with 1/4 cup of whole buttermilk; brush the dough with this mixture.
  4. Bake for around 40 to 50 minutes, stopping every 15 min to brush the top of the bread with the melted butter/whole milk mixture.

Ingredients
  1. 3 large Irish potatoes peeled and quartered
  2. 1 stick of butter
  3. 1 medium onion chopped
  4. 2 cups diced carrots, corn, peas
  5. 2 lbs ground round beef
  6. 1/2 cup beef broth
  7. Salt & Pepper
Instructions
  1. Place potatoes in medium sized pot. Cover with at least an inch of cold water. Add a teaspoon of salt. Bring to a boil, reduce to a simmer, and cook until soft.
  2. While the potatoes are cooking, melt 4 tablespoons of the butter in a large sauté pan on medium heat. Add the onions and carrots cook until soft.
  3. Add ground beef to the pan with the vegetables. Cook until no longer pink. Season with salt and pepper.
  4. Add the broth, then bring the broth to a simmer and reduce heat to low. Cook uncovered for 10 minutes, adding more broth if necessary to keep the meat from drying out.
  5. Remove the potatoes from the pot and place them in a bowl with 4 the rest of the butter and mash. Season with salt and pepper to taste.
  6. Preheat oven to 400°F. Spread the beef and vegetables in a large baking dish. Spread the mashed potatoes over the top of the ground beef. Cook until browned.
