Grilled Caesar Salad

Ingredients
- Croutons - 1 boule day old bread
- 4 Tbsp. olive oil
- 4 Tbsp. butter
- dried oregano
- dried basil
- garlic, minced
- Dressing - 1 oz. Anchovy Paste
- 1 Tbsp. Mustard
- 1 Tbsp. peeled garlic
- 1 Tbsp. Worcestershire
- ¼ cup red-wine vinegar
- 1 tsp. fresh ground black pepper
- ½ cup fresh squeezed lemon juice
- ½ tsp. Tabasco
- 1 ½ cups olive oil
- Salad - 2 heads Romaine Lettuce, washed, dried, cut into quarters lengthwise
- Olive oil
- Fresh parmesan cheese
Instructions
- Croutons - Cut the crust off of the bread. Cut the bread into 1” cubes or preferred size. Place in bowl.
- Melt butter in saucepan. Turn off heat. Mix in olive oil. Pour mixture over cubes and gently toss until covered.
- Place cubes evenly on a sheet pan, sprinkle with oregano, basil and garlic. Place in 350* oven until lightly browned.
- Dressing - Combine all ingredients except oil in a food processor.
- Gradually incorporate the oil in a fine stream.
- Adjust the seasonings as needed, serve at once or refrigerate.
- Salad - Drizzle lettuce quarters lightly with olive oil.
- Grill until slightly charred.
- Place on a large plate, drizzle with Caesar dressing, top with freshly shaved parmesan cheese and croutons
