Mary's Famous Smoked Trout Mousse

Ingredients
- 2 eggs, boiled and finely chopped
- 3 small scallions, trimmed and finely sliced on a bias
- 1# smoked trout (can substitute smoked salmon fillets)
- 1 Tbsp powdered gelatin
- 1/4 cup cold water
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- juice of 1 lemon
- salt and pepper
- 3/4 cup heavy cream
- 1 bunch watercress for garnish
Instructions
- Remove the skins from trout and flake into a mixing bowl.
- Sprinkle the gelatin over cold water in a small bowl and let stand until granules become spongy, about 5 minutes.
- Add eggs, scallions, mayonnaise, yogurt, lemon juice, salt and pepper to trout. Blend all ingredients, taste for seasoning.
- Whip the cream to soft peaks.
- Melt the gelatin in a small saucepan over low heat. Add to trout mixture and mix very thoroughly. Immediately fold in the whip cream.
- Pour in greased mold and refrigerate at least 4 hours.
- Unmold, garnish with watercress and serve with crackers.
- Serve on a bed of watercress with watercress and lemon zest or wheel garnish.
